Kavurma – fried meat in Turkey. Continuing the theme of “The Best Turkish food”.
Kavurma is a traditional dish on Kurban Bayram. Kavurma is been preparing with a fresh meat, it is very important to cook the tender meat. Usually kavurma is been preparing a large number, so is softer and tastier.
1 kg of meat
200 g of grease or butter,
Salt, black and red pepper, thyme.
The meat cut in small pieces, the grease cut in even smaller pieces. Warm the frying pan and put pieces of grease. Mix constantly, fry them until a crackling, then put into the same pan, pieces of meat, and, continue mixing, fry them quickly on a very high heat so that virtually all sides of each piece is formed golden brown. This will keep the juiciness of meat. Then reduce the heat, cover and, mix occasionally, cook until complete evaporation of the liquid. In just a few minutes add salt and spices. To enhance the flavor you can add a piece of butter. Serve hot. Bon Appetit!
